Baked Gnocchi with Sausage and Sage Recipe

Ingredients
Gnocchi Dough
- 1 pound Potatoes, peeled
- 1 cup Flour, all-purpose
- 1 Egg
- 3 tablespoons Olive Oil
- ½ teaspoon Salt
Sausage and Sage Mixture
- ½ cup Sage Leaves, freshly chopped
- ½ pound Italian Sausages, sliced
- 1 Onion, small, chopped
- 2 cloves Garlic, minced
- 1 ¾ cup Canned Tomatoes
- 1 teaspoon Italian Seasoning
- ¼ teaspoon Red Pepper Flakes
- ¼ teaspoon Black Pepper
- 1 teaspoon Salt
- 8 ounces Mozzarella Cheese, fresh, sliced
Instructions
Make the Gnocchi Dough
- Fill a pot with water and place it over high heat. Cut the potatoes into even pieces and let them boil for 10 to 15 minutes or until you can easily pierce them with a fork.
- Drain and mash the potatoes.
- Add mashed potatoes, all-purpose flour, salt, and eggs in a large mixing bowl. Mix well to combine everything.
- Transfer the dough to a lightly floured surface and start kneading the mixture until it doesn’t stick to your fingers.
- Divide the dough into four parts and start shaping it into a rope using the palms of your hands.
- Cut the dough into inch-thick gnocchi.
- Dust a little all-purpose flour on top and toss the pieces. Let it rest for 15 to 20 minutes.
Prepare the Sausage and Sage Mixture
- In an oven-safe pot, heat oil. Add sliced sausages and sauté for 5 to 7 minutes or until golden brown. Once done, remove them from the pot.
- Add more oil if needed, and add chopped onions. Sauté for 2 to 3 minutes or until translucent.
- Add minced garlic and sauté until fragrant.
- Incorporate the canned tomatoes and season with salt, Italian seasoning, black pepper, and red pepper flakes.
- Add a dash of water and cook the tomatoes over low heat for 8 to 10 minutes until they are soft.
Assemble the Baked Gnocchi with Sausage and Sage
- Preheat an oven to 350 degrees Fahrenheit and spray a baking dish with cooking spray.
- Meanwhile, fill another pot with water and place it over medium-high heat.
- Once the water starts to boil, add gnocchi and let it simmer until it floats.
- Drain the gnocchi with a strainer.
- Take the pot with the tomato mixture off the heat. Add sausages, gnocchi, and sage leaves and stir them together.
- Spread it into your prepared baking dish and add sliced mozzarella on top. Bake for 15 minutes or until the cheese is bubbly and fully melted.
