Ingredients
- 3 Zucchini, sliced into rounds
- 1 Egg White
- ⅓ cup Breadcrumbs
- ⅓ cup Parmigiano Reggiano Cheese, grated
- dried oregano, to taste
- Salt, to taste
- Black Pepper, to taste
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a small mixing bowl, combine breadcrumbs, grated cheese, oregano, salt, and pepper.
- Place egg white into another small mixing bowl.
- Coat zucchini rounds with egg white and then transfer them into breadcrumbs mixture. Press the breadcrumbs on each side to coat well.
- Bake for 20 minutes until lightly golden.
