Anytime I watch an episode of Searching for Italy, I walk away wanting to make every single recipe. Actually, if we’re making wishes here, then I want to physically be in Italy trying the real version of the these recipes from the authentic restaurants that have made them famous. Since international travel is a distant memory from prior to 2020, making these recipes from the comfort of my home is the closest I can get for the time being.
The moment I saw this coniglio all’Ischitana recipe I knew I wanted to try it. Coniglio all’Ischitana is a rabbit stew/casserole done in the traditional style of Ishchia, an island that’s a ferry ride away from Naples. I’ve grown up eating rabbit my entire life, and I know when cooked properly it is absolutely delicious and not as game-y as one might think.
This specific recipe from Il Focolore, uses local wild rabbit and is famous amongst the locals of Campania. It is described as “lick your fingers” delicious, and we couldn’t agree more!
