Healthy Chicken Penne Pasta with No Sauce Recipe
A luxurious Healthy Chicken Penne Pasta with No Sauce recipe which pairs penne pasta and grilled chicken with a decadent cherry tomato and arugula topping.
Ingredients
- 2 Chicken Breasts, whole, boneless skinless
- 8 ounces Penne Pasta, dry
- 1 cup Cherry Tomatoes, halved
- 2 cups Arugula, fresh
- 3 cloves Garlic, minced
- ½ teaspoon Basil, dried
- ½ teaspoon Red Pepper Flakes
- Salt, to taste
- Black Pepper, to taste
- 2 Tbsp Olive Oil, divided
- Parmesan Cheese, for serving
Instructions
- Preheat an outdoor grill and brush olive oil on the grates.
- Pat each chicken breast dry with paper towels and season both sides with salt and black pepper, then grill them for about four minutes per side.
- While the chicken is cooking, turn a stove to high heat and bring a pot of water to boiling point.
- Cook the penne pasta until al dente, then drain and set aside.
- Next, warm a skillet over medium heat and add the olive oil. Sauté the minced garlic until fragrant.
- Add the pasta, cherry tomatoes, and seasonings, then stir and cook for a couple of minutes.
- Remove the pasta from the heat and cut the grilled chicken into strips after it has rested.
- Transfer the chicken penne pasta dish to a large serving bowl and add fresh arugula and parmesan cheese on top before serving.
Notes
- You can add more spice or more herbs to the dish to enhance the flavor.
- Squeeze a bit of fresh lemon juice on top just before serving your chicken penne pasta.
