Italian Sausage Gnocchi Soup Recipe
A luxurious Italian Sausage Gnocchi Soup recipe that pairs gnocchi and Italian sausage with a decadent seasoned broth.
Ingredients
- 1 ¾ cup Potato Gnocchi, or 14-ounce premade gnocchi
- 10 ounces Italian Sausage, casing removed
- 1 ½ cups Red Kidney Beans, removed from the can, drained, and rinsed
- 2 tbsp Olive Oil
- 1 Yellow Onion, medium-sized, chopped
- 2 Garlic Cloves, minced
- 1 ½ cups Tomatoes, roughly chopped
- 4 cups Chicken Broth
- 1 ½ tbsp Tomato Paste
- ¼ tsp Red Pepper Flakes
- ½ tsp Oregano, dried
- ¼ tsp Rosemary, dried
- ½ tsp Basil, dried
- Salt, to taste
- Basil , fresh, for garnish
Instructions
- Remove the sausage casings and prepare the rest of the ingredients.
- Place a large pot or a Dutch oven over medium heat.
- Add olive oil and once it heats up, add sausage and start breaking it into smaller chunks.
- Let it cook for about 7 to 8 minutes until it is partially cooked but still pink.
- Add the onion and sauté for 2 to 3 minutes.
- Add minced garlic and continue to sauté until the garlic is fragrant.
- Add tomato paste and continue to cook for a minute.
- Lastly, mix in the tomatoes and season with red pepper flakes, dried oregano, dried basil, and dried rosemary.
- Pour in chicken broth and bring the soup to a boil.
- Once it starts to boil, add red kidney beans and let them boil for about 5 minutes.
- Add potato gnocchi and continue to boil the soup for 3 to 5 minutes or until the gnocchi is cooked through.
- Season with salt and mix well.
- Serve the soup by garnishing it with freshly chopped basil if desired.
