When you can’t decide between a tomato-based or cream-based pasta sauce, the Italian pink sauce is to the rescue (also called parma rosa or rosé sauce). It is the perfect sauce for us fickle folks since it’s a blend of both tomato and cream sauce – you get the best of both worlds. Not only is it delicious, but its color is absolutely divine. For this recipe, we used it on penne, but it will work on almost any pasta type.
Penne with Italian Pink Sauce Pasta Recipe (Parma Rosa Sauce)
A luxurious Italian pink sauce recipe that blends tomato sauce with a decadent cream sauce, topped over penne.
Ingredients
- 11 oz. penne
- 1 shallot, finely chopped
- 2 tablespoons extra virgin olive oil
- 14 oz tomato puree, canned
- ¾ cup heavy cream
- 1 teaspoon sugar
- Parmigiano Reggiano cheese, grated, to taste
- 2 teaspoons dried basil
- black pepper, to taste
- salt, to taste
Instructions
- Heat extra virgin olive oil in a saucepan over medium heat.
- Add finely chopped shallot and cook until lightly golden.
- Pour in tomato puree, sugar, and dried basil. Season with salt and pepper, and stir well to combine.
- Cook for 12 to 15 minutes.
- Add in heavy cream and stir well to combine. Cook for an additional 2 minutes.
- Remove from the heat and set aside.
- Cook the pasta in salted water according to the package instructions.
- Add drained pasta, pink cream sauce, and grated Parmigiano in the pan with the sauce and toss well to combine.
- Season with salt and black pepper. Add more Parmigiano if you’d like.
- Serve and enjoy.

Notes
- You can use the pink sauce as a condiment for any type of pasta.
- It is best if served immediately.
- Garnish with chopped chives or cilantro.
