Prawns and polenta are probably one of the simplest Italian recipes. Prawns are prepared in a tasty and dense tomato-wine sauce and served over polenta. You can prepare this recipe also as an appetizer and serve it in small glasses, it is very eye-catching that way, then you add a pinch of green color with some chopped parsley, basil or chives, et voila. This recipe can also be served as a main dish, and prawns in the sauce can be used as a topping for bruschetta.
Prawns and Polenta Recipe
A delicious and easy Prawns and Polenta recipe, which pairs fresh prawns with a decadent and creamy polenta.
Ingredients
Polenta
- 1 cup Polenta
- 3 cups Chicken Broth
- Olive Oil, extra virgin, to taste
- Salt, to taste
- Black Pepper, to taste
Prawns
- 2 lb Prawns, peeled and deveined
- 1 Onion, chopped
- 2 Garlic Cloves, minced
- 1 Tomatoes, can crushed
- 1 tablespoon Tomato Paste
- ¾ cup White Wine, dry
- 3 tablespoons Olive Oil, extra virgin
- ½ teaspoon Red Pepper Flakes
- Salt, to taste
- Black Pepper, to taste
Instructions
- In a tall and narrow pot, bring chicken broth to a boil over medium heat.
- Whisk in the polenta and stir well with a wooden spoon.
- Reduce the heat and cook, frequently stirring, until it thickens.
- Season with salt and pepper to taste.
- Divide into four serving bowls.
- Heat extra virgin olive oil in a pan over medium heat and add chopped onion. Cook until lightly golden.
- Add minced garlic and cook for one more minute.
- Blend with wine and cook for two minutes.
- Pour in crushed tomatoes, tomato paste, and season with red pepper flakes, salt, and black pepper. Stir well to combine.
- Cook covered for 40 minutes over medium heat.
- Add prawns and cook for 5 minutes.
- Serve prawns over polenta.
- Enjoy!
Notes
- If you want to make it spicier, add more red pepper flakes.
- Prepare polenta while the sauce is cooking to save some time, or you can also use instant polenta.
