While appetizers often play second fiddle to the main dish, appetizers whet the palette for the remaining dinner. This prosciutto-wrapped pear appetizer is a perfect example of this.
Prosciutto has a delicately sweet, slightly smokey, and salty taste that goes great with sharp flavors. In this instance, the sweet, sharp, and tart flavors of juicy, lightly poached pears work incredibly well together.
Prosciutto Wrapped Pear Appetizer Recipe
A luxurious prosciutto-wrapped pear appetizer recipe that pairs poached pears with a decadent prosciutto and honey topping.
Ingredients
- 2 large Pears
- 8 slices Prosciutto
- 2 cups Water
- 1 cup White Wine
- 1 Star Anise
- 1 whole Cinnamon Stick
- ΒΌ cup Sugar, granulated
- 4 Cloves
- 1 Lemon, juiced
- Lemon Zest
- 1 handful Arugula
- Olive Oil
- Salt, to taste
- Black Pepper, to taste
- 1 teaspoon Honey
Instructions
- Begin by making your poaching liquid for the pears by taking a saucepan and adding in your water, white wine, sugar, cinnamon stick, star anise, cloves, lemon juice, and lemon zest. Heat to a very gentle simmer then turn the heat down.
- While your liquid is heating up, take your pears and carefully peel and core them, making sure to leave the pear stems intact.
- Once your sugar has dissolved, submerge your pears in the liquid and heat on the lowest setting for 4 minutes. The idea is to soften the pears slightly and allow the flavor of the liquor to penetrate the flesh.
- After 4 minutes, remove the pears from the liquid, submerge them in ice water to cool, and then, when cooled, slice them into wedges. You should get 4 generous wedges from each pear.
- Next, take a slice of prosciutto ham and carefully wrap it around a wedge of pear, rolling it up tightly. Repeat this process with the other pear wedges and then place them onto a clean plate and refrigerate them to firm up.
- As your pears are setting, make a garnish by taking your arugula leaves, drizzling them in a little olive oil, and seasoning with salt and black pepper.
- Remove the pears from the fridge, add a side garnish of your dressed arugula leaves, lightly drizzle a small amount of honey over the prosciutto wrapped pears.
- Serve immediately and enjoy.
Notes
- You can slice fresh pears, add lemon juice on top, and use those for your prosciutto appetizer if you have to cut down on prep time.
