The coffee it produces is wonderful - it is full of flavor and has no bitterness. This model uses the half-moon filters, I do not find them difficult to use. Obviously this takes a little more effort than flipping a switch on an electric drip, but for me it is worth the effort. The difference in time/effort for me is that I have to add the water in 1-2 batches since it doesn't drip quickly enough for me to add it all at once. Note that the most you can pour into this model is 2 cups of water (2- 8 oz cups) - I suppose it is called a 3 cup because most coffee makers assume a 'cup' serving to be around 6 oz - but it is just right for me. Since there is no burner to keep the coffee warm, I usually heat my second mugful in the microwave which works very well, there is no bitterness after reheating. I wash my unit every time I use it, it's not difficult to untie the leather strap, remove the collar, clean it with a bottle brush and set it aside to air dry. The glass is dishwasher safe but since I don't run my dishwasher every day and can quickly wash it by hand that wasn't a big deal for me. I have found that I use fewer beans since purchasing the Chemex because I rarely throw any coffee down the drain - first because it tastes so good and secondly because I make only what I can drink.
It's definitely a bit more of an investment of time and labor than simply popping a Keurig plastic cup into a brewer, and on the those mornings when you need it east and fast, the Chemex solution might feel like a Herculean effort, but if you are willing to preserve, you will be rewarded with some superior coffee. It really helps if you have an electric kettle to get the water super hot and while it's boiling you can get the filter ready. Also, if you go this route, invest in a good burr coffee grinder. Amazon has a great selection of both appliances. I was totally skeptical that a grinder could really make a difference, but since we happened to have both the fancy Krups burr grinder and a cheap Krups grinder I put them both to the test, and was quite surprised to find it does make a difference. Having lost the bet with my better half over this issue, I now have to make the coffee in the morning for the next month.
You do need a filter for the carafe, and Chemex of course has their version. I have to wonder about the folks at Chemex, they really made the filter thing a bit of an origami project and when you are half asleep trying to pull off a focused project, you might be tempted to throw a cup under the Keurig and be done. But if you can manage enough brain cells to get the filter folded (and the trick is make sure the little half circle thing is opened properly inside - again, a bit of feat when your eyes are barely open - otherwise coffee grounds will go right through). Chemex does sell pre-folded filters for the morning mentally challenged. So you may ask, why not just use the plain cone filters. Well, they don't fit properly and the mess you will have on your hands will leave you even more cranky than you were (yep, tried this and it was NOT a short-cut).
Once the water is ready, you pour over it the grounds, wait a minute or two and repeat until the carafe is mostly full (great opportunity to get that dishwasher emptied while you are making the coffee). Remove the filter which is compostable or recyclable in the green waste can, so you can do your part for the environment, and pour your beautiful cup of joe. Obviously the major benefit of making coffee this way is you can buy really, really good beans.
The carafe cleans up well and the coffee is downright awesome. If you have visited any of the more trendy coffee houses and noticed many are doing this pour-over type of coffee, and if you are patient, you will be rewarded with a truly fine cup of coffee.
