Spicy Chicken Penne Pasta with No Sauce Recipe

Ingredients
- 2 tablespoons Olive Oil
- 8 ounces Penne Pasta, dry
- 2 Chicken Breasts, whole, diced
- ¼ cup Dry White Wine
- 2 Red Chili Peppers, dried, torn into pieces
- ¼ cup Sun-dried Tomatoes, drained and chopped
- ½ Onion, small, finely chopped
- 2 cloves Garlic, minced
- 1 teaspoon Smoked Paprika
- ¼ teaspoon Thyme, dried
- ½ teaspoon Black Pepper
- Salt, to taste
- Arugula Leaves, for garnish
Instructions
- Fill a pot with water and season it with salt. Bring it to a boil and cook the penne pasta until al dente. Drain it and set aside.
- Meanwhile, pat the boneless chicken dry then cut the chicken into equal pieces. Set the chicken aside.
- Heat olive oil in a saute pan over medium heat. Add finely chopped onions and sauté for 2 to 3 minutes.
- Add minced garlic and sauté for a minute or until fragrant.
- Incorporate the dry red chili peppers, sun-dried tomatoes, and diced chicken and cook for 3-5 minutes.
- Season with smoked paprika, thyme, black pepper, and salt. Mix well.
- Add dry white wine and continue to cook until the alcohol evaporates completely.
- Stir in the cooked pasta, garnish with fresh arugula, and enjoy.
Notes
- Since it is a spicy chicken pasta dish, feel free to add more spice, such as cayenne pepper, according to your liking.
