Strawberry Cottage Cheese Popsicles Recipe
A luxurious Strawberry Cottage Cheese Popsicles recipe which pairs fresh strawberries with a decadent creamy cottage cheese mixture.
Ingredients
- 1 ¼ cups Strawberries, fresh, roughly chopped
- ¼ cup Sugar, granulated
- 1 cup Cottage Cheese
- ¼ cup Evaporated Milk
- ½ teaspoon Vanilla Extract
- Sliced Almonds, optional garnish
Instructions
- Wash the strawberries, remove the stems, and roughly chop them.
- Add the strawberries in a bowl along with 3 tablespoons of sugar. Mix well and let it sit for 15 minutes. Stir occasionally to help them break down.
- In a food processor bowl, add cottage cheese, remaining sugar, evaporated milk, and vanilla extract.
- Process for a minute or two or until the mixture turns smooth. Take the mixture out of the processor into a bowl, leaving about ¼ cup of mixture in the food processor bowl.
- Add strawberry and sugar mixture to the bowl and process for a minute or until smooth.
- Scoop the strawberry mixture and add it to a popsicle mold, filling the mold halfway on one side.
- Fill the other half of the mold with the cottage cheese mixture.
- Garnish the popsicle with sliced almonds.
- Place the popsicle mold in the freezer and freeze for 4 to 6 hours or until they are set.
Notes
• If you don’t have fresh strawberries, use frozen. Thaw them completely to get rid of
excess moisture. • You are welcome to use raspberries or mix different berries to enhance the flavor of
these cottage cheese popsicles. • If you don’t have popsicle mold, use disposable cups. Cover the cups with aluminum foil
and poke a hole to add a popsicle stick in the middle of the cup. • These cottage cheese popsicle desserts will stay good in the freezer for up to a month.
