Tomato and Cheese Tagliatelle Pasta Skillet Bake Recipe
A luxurious Tomato and Cheese Tagliatelle Pasta Skillet Bake recipe that pairs tagliatelle pasta with a decadent combination of roasted tomatoes and melty mozzarella cheese.
Ingredients
- 12 ounces Tagliatelle Pasta
- 2 cups Cherry Tomatoes, halved
- 2 tablespoons Olive Oil
- 1 whole Onion, finely chopped
- 2 cloves Garlic, minced
- 1 can Diced Tomatoes, 14 ounces
- 1 teaspoon Oregano, plus more for topping
- Salt, to taste
- Black Pepper, to taste
- 8 ounces Mozzarella Cheese, cut into small cubes
- ¼ cup Parmesan Cheese, grated
- Fresh Basil Leaves, optional garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the tagliatelle pasta in a large pot of salted boiling water until al dente. Drain the pasta and set it aside.
- While the pasta is cooking, toss the halved cherry tomatoes with 1 tablespoon of olive oil, salt, and black pepper.
- Spread them out on a baking sheet and roast them in the preheated oven for about 15-20 minutes, or until they start to blister and caramelize. Remove them from the oven and set them aside.
- In a large oven-safe skillet, heat the remaining tablespoon of olive oil over medium heat. Add the finely chopped onion and minced garlic. Sauté for 2-3 minutes until they become soft and translucent.
- Stir in the can of diced tomatoes and dried oregano. Simmer the sauce for about 5 minutes, allowing it to thicken. Season with salt and pepper to taste.
- Add the cooked tagliatelle pasta to the skillet and toss it in the tomato sauce until well coated.
- Gently fold in the roasted cherry tomatoes, cubes of fresh mozzarella cheese, and grated parmesan cheese.
- Transfer the skillet to the oven and bake for 10-15 minutes, or until the cheese is bubbly and golden.
- Remove the skillet from the oven and let it cool for a few minutes.
- Garnish with more dried oregano and fresh basil leaves if desired.
- Serve the tomato and cheese tagliatelle pasta skillet bake warm and enjoy.
Notes
- You could substitute the tagliatelle with fettuccine or pappardelle noodles.
- Feel free to include any other roasted vegetable to enhance this pasta skillet bake.
