This vegetarian-friendly version of calzoni is satisfying and delicious. It calls for eight ingredients and is a fun meal to make with friends. You will also be making homemade dough, but don’t be intimidated by that. You won’t need any special equipment for the dough, just a mixing bowl, kitchen towel, a clean countertop, and your hands. If you’re in the mood for something Italian for dinner, you won’t be disappointed by this recipe.
Vegetarian Calzoni Recipe
A luxurious Vegetarian Calzoni recipe that pairs caramelized onions, tomatoes, cheese, and fresh parsley with a decadent calzoni dough.
Ingredients
Dough
- 2 ¾ cups All-Purpose Flour
- ½ tbsp Sugar
- 2 teaspoon Salt
- 2 ½ teaspoon Yeast, fresh
- 1 ¼ cup Water, warm
- 1 tbsp Olive Oil, extra virgin
- 1 Egg, beaten
Filling
- 2 tbsp Olive Oil, extra virgin
- ¼ cup Red Onion, diced
- 2 Garlic Cloves, freshly minced
- 1 Tomato, medium sized, diced
- ½ Red Bell Pepper, diced
- ½ cup Mild Cheddar Cheese, shredded
- ¼ cup Mozzarella Cheese, shredded
- 1 handful Fresh Parsley
Instructions
For the Dough
- In a bowl, pour ½ cup of water and add yeast, mix and leave for five minutes until the yeast blooms.
- Add sugar, olive oil, remaining water, and salt to another bowl, and mix thoroughly. Once the yeast mixture is ready, add it to the flour mixture and combine.
- Place the dough onto a floured countertop and knead for 3 to 5 minutes until the dough becomes smooth. Transfer dough to a bowl, cover with a light kitchen towel, and leave for one to two hours at room temperature.
For the Filling
- Pour oil into a 10-inch pan over medium heat, add onion and cook for a few minutes until they soften.
- Add the garlic and cook for another minute.
- Set aside your onions and garlic, then wash and cut the fresh vegetables and parsley.
Assembly
- Once the dough is ready, divide into four equal portions and shape into balls. Roll them into circles using a rolling pin. The thickness of the dough should be no more than ¼ inch.
- Add cheese and some of your filling ingredients to the middle of the calzoni.
- Fold the dough in half and seal the calzoni edges by pinching firmly with your fingers.
- Brush the tops of your calzonis with egg and arrange them on a baking sheet lined with parchment paper.
- Place the baking sheet in a preheated (425 degrees F) oven and bake for 10 to 15 minutes until golden brown.
- Once done, remove from the oven and serve.
Notes
- You can include other vegetables in your calzoni, such as roasted zucchini, eggplant, or cauliflower.
- Replace the homemade dough with a raw pizza dough from the store if you don’t have time to make your own dough.
