Vegetarian Penne Pasta Skillet Bake Recipe
A luxurious Vegetarian Penne Pasta Skillet Bake recipe which pairs penne pasta and sauteed vegetables with a decadent cheesy topping.
Ingredients
- 400 grams penne pasta, dried
- 1 ½ tablespoons Olive Oil
- 1 cup Button Mushrooms, sliced
- 2 cups broccoli florets
- 2 cups Cauliflower Florets
- 1 small Onion, chopped
- 2 cloves Garlic, minced
- 2 tablespoons white wine
- 1 cup Alfredo Sauce
- 1 teaspoon Italian Seasoning
- ½ cup mozzarella cheese, shredded
- ¼ cup Parmesan cheese, grated
- Ground Black Pepper, to taste
- Kosher Salt, to taste
Instructions
- Preheat an oven to 375 degrees Fahrenheit.
- Fill a pot with water and place it over medium-high heat. Season it with salt. Once it starts to boil, add pasta and cook it until al dente.
- Once done, drain the pasta and set it aside.
- Place a pan over medium heat and add olive oil. Once the oil heats up, add onion and sauté for 3 minutes.
- Add garlic and sauté for a minute.
- Pour in the white wine to deglaze the pan.
- Next, incorporate the alfredo sauce, Italian seasoning, salt, and black pepper.
- Add mushrooms, broccoli, and cauliflower and cook for 5 minutes or until they turn soft.
- Transfer the veggies and sauce into the skillet, then stir in the cooked penne.
- Top the vegetarian penne pasta skillet bake with mozzarella and parmesan cheese.
- Bake the dish for 10 minutes, then serve and enjoy.

- You can use ziti, cavatappi, or rigatoni pasta if you prefer.
