Preheat oven to 400°F. Line a baking sheet with parchment paper.
Beat the eggs in a small mixing bowl. Season with salt and pepper.
On a plate, combine breadcrumbs and grated Parmigiano cheese.
Dip a few zucchini strips into beaten eggs, and then coat them with breadcrumbs. Repeat until you coat all zucchini strips.
Arrange them onto the lined baking sheet.
Bake for 20 minutes or until lightly golden brown. Turn them halfway through.
In the meantime, place tomatoes, garlic clove, tomato puree, extra virgin olive oil, oregano, sugar, and a pinch of salt and pepper into a high-speed blender. Blend until homogeneous and smooth. Transfer the sauce into a serving bowl.
Serve zucchini fries with tomato coulis dipping sauce.

For more flavor, add chopped thyme into tomato coulis dipping sauce.
You can add more Parmesan cheese into breadcrumbs for a crispier result.
