- 2 tablespoons Olive Oil, extra virgin
- 1 Onion, large, chopped
- 2 Garlic Cloves, minced
- 4 lb Ripe Tomatoes, cut into chunks
- ½ teaspoon Oregano, dried
- 10 Fresh Basil Leaves
- ½ tablespoon Fresh Parsley, chopped
- Salt, to taste
- Black Pepper, to taste
Place tomato chunks into a food processor and process them a few times.
Heat extra virgin olive oil in a saucepan over medium heat.
Add chopped onion and sauté until lightly golden.
Add garlic, tomatoes, basil leaves, and parsley, then season with oregano, salt, and pepper.
Bring the marinara sauce to a boil.
Reduce the heat and cover with a lid.
Let it simmer for approximately 20 minutes.
Serve with your favorite pasta and enjoy.
