- ¼ cup Olive Oil
- 1 Onion, finely chopped
- 4 cloves Garlic, thinly sliced
- 2 tsp Crushed Red Pepper
- ½ cup White Wine
- 4 cups Crushed Tomatoes
- 4 cups Prawns, peeled and deveined
- Salt, to taste
- 2 tbsp Parsley, finely chopped
- 2 tbsp Dill, finely chopped
Place a saute pan on medium heat and add the olive oil.
Next, add the onion to the saute pan and cook for 5 minutes, or until softened.
Stir in the garlic and crushed red pepper, and cook for a minute until fragrant.
Pour in the white wine and bring to a boil, reducing the sauce by half.
Next, add the crushed tomatoes and mix thoroughly with the other ingredients, letting it simmer for 10 minutes.
Place the large prawns into the saute pan and poach them in the diavolo sauce.
Season the diavolo sauce to taste, then serve topped with freshly chopped parsley and dill.
- Add less crushed red pepper if you want a milder diavolo sauce.
- You can substitute the white wine with broth instead.
