Bring a pot of water on a hot stove. Add salt and cover the pot so it can come to a boil.
Meanwhile, heat olive oil in a skillet over medium heat.
Add the chopped shallot and sauté it for a minute.
Add garlic and continue to sauté until fragrant.
Pour in vodka and let it simmer until the alcohol evaporates.
Add crushed tomatoes and cook the sauce for a few minutes.
Once the water is boiling, add your lobster ravioli and let it cook for several minutes.
Check the skillet, reduce the heat to low, and pour in heavy cream. Season with Italian seasoning, salt, and black pepper.
Let it come to a simmer and immediately take it off the heat. Strain your lobster raviolis and toss them in the sauce.
Garnish your lobster ravioli dish with freshly chopped chives.
