Spicy Truffle Spring Pasta Salad (Vegetarian and Made with Spicy Truffle Mayo)
A luxurious Spring Pasta Salad recipe which pairs fresh tomatoes with a decadent spicy truffle mayo cream sauce.

- 10 oz fusilli, (or any short pasta that you like)
- 1 cup spicy truffle mayo
- 1 ½ cups tomatoes, cubed
- 1 shallot, diced
- 2 tsp lemon juice
- salt, to taste
- black pepper, to taste
- fresh basil leaves
Bring a large pot of salted water to a boil and cook pasta as indicated on the package instructions.
While waiting on the pasta, combine the tomato, spicy truffle mayo, lemon juice, and salt and pepper in a mixing bowl. Mix until thoroughly combined.
Once pasta is cooked, drain and rinse with cool water until no longer warm.
Pour cooled pasta into the tomato mixture bowl, along with the shallots. Mix until thoroughly combined. Add more salt and pepper as needed.
Cover and place into fridge until ready to serve. Serve with fresh basil leaves.
