Penne with Italian Pink Sauce Pasta Recipe (Parma Rosa Sauce)

Heat extra virgin olive oil in a saucepan over medium heat.
Add finely chopped shallot and cook until lightly golden.
Pour in tomato puree, sugar, and dried basil. Season with salt and pepper, and stir well to combine.
Cook for 12 to 15 minutes.
Add in heavy cream and stir well to combine. Cook for an additional 2 minutes.
Remove from the heat and set aside.
Cook the pasta in salted water according to the package instructions.
Add drained pasta, pink cream sauce, and grated Parmigiano in the pan with the sauce and toss well to combine.
Season with salt and black pepper. Add more Parmigiano if you’d like.
