Preheat the oven to 425°F. Line two baking sheets with parchment paper.
Place the fries into a large mixing bowl and season with extra virgin olive oil and salt. Mix well to combine.
Spread the fries onto baking sheets and spray them with truffle oil.
Bake for 25 minutes, flipping them halfway through.
Remove from oven and sprinkle with Parmigiano Reggiano, and (optional) parsley.
Serve and enjoy.
Notes
Try it with different dipping sauces. We love dipping these in spicy truffle mayo!
For more flavor, serve with Mediterranean sauce. Mix 4 minced garlic cloves and one tablespoon chopped parsley in a small bowl. Cover with extra virgin olive oil. Let it stand overnight. Spoon over truffle fries.
