- 3 ounces Parmesan Cheese, freshly grated
- Salt, to taste
- 2 Tbsp Olive Oil

Instructions

- Meanwhile, warm up an outdoor grill and brush olive oil on the grates.
- Pat each chicken breast dry with paper towels and season both sides with salt and black pepper, then grill them for about four minutes per side.
- While you’re waiting on the chicken, turn a stove to medium heat and melt half the butter in a large saucepan.
- Stir in the black pepper to the butter and let it cook for about a minute.
- Add half a cup of pasta cooking water and bring it to a simmer.
- Incorporate the remaining butter, then stir in the cooked pasta and cheese until a sauce forms.
- Remove the pasta from the heat and cut the grilled chicken into strips after it has rested.
- Serve your cacio e pepe chicken penne pasta immediately along with a side salad and breadsticks.
Notes
- Pour in a little more pasta cooking water if your sauce gets too dry.
- Feel free to use a grill pan instead of an outdoor grill to cook the chicken for this chicken penne pasta dish.
