Baked Mac and Cheese Muffins Recipe

Ingredients
- 8 ounces Elbow Macaroni, dried
- 2 tablespoons Butter
- 2 tablespoons Flour, all-purpose
- 2 cups Milk
- 2 cups Cheddar Cheese, shredded
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- ¼ teaspoon Paprika
- ¼ cup Parmesan Cheese, grated
- Breadcrumbs, optional garnish
- Fresh Parsley, finely chopped
- Cooking Spray
- Tomato Sauce, optional for dipping
Instructions
- Preheat an oven to 375°F (190°C) and grease a muffin tin with cooking spray.
- Cook the elbow macaroni until al dente, then drain and set aside.
- In a large saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1-2 minutes to create a roux.
- Gradually pour in the milk while whisking constantly to avoid any lumps. Continue cooking and whisking until the mixture thickens, about 3-4 minutes.
- Reduce the heat to low and add the shredded cheddar cheese, salt, black pepper, and paprika. Stir until the cheese is melted and the sauce is smooth.
- Remove the saucepan from the heat and add the cooked macaroni to the cheese sauce. Stir until the macaroni is evenly coated.
- Spoon the mac and cheese mixture into the greased muffin tin, filling each cup to the top.
- Sprinkle grated Parmesan cheese and breadcrumbs over the top of each muffin.
- Bake in the oven for about 20-25 minutes until the muffins are golden brown and crispy around the edges.
- Remove the muffins from the oven and let them cool in the tin for a few minutes. Use a butter knife to loosen the edges, then transfer the muffins to a wire rack to cool further.
- Serve the baked mac and cheese muffins warm with parsley on top.
