Ingredients
- ½ cup Butter, unsalted
- 2 cups Heavy Cream
- 1 head Garlic, roasted
- 1 cup Parmigiano Reggiano, grated
- ½ cup Pecorino Romano, grated
- ¼ cup White Wine, dry
- 1 tablespoon Thyme, freshly chopped
- 1 tablespoon Basil, freshly chopped
- Salt, to taste
- Black Pepper, to taste
Instructions
- Melt butter in a saucepan over medium heat.
- Squeeze the roasted garlic cloves directly into the pan.
- Sauté the garlic until fragrant.
- Add heavy cream and white wine to the pan and bring the sauce to a simmer. Reduce the heat, put a lid on the pan, and let it cook for about 10 minutes.
- Incorporate the cheeses a handful at a time until fully melted.
