The ‘assassin’s spaghetti’ is no ordinary pasta dish. This take on classic spaghetti features minced garlic and chili peppers, giving the sauce a spicy punch.

It is a proper one-pot meal because the spaghetti noodles are cooked directly in the sauce. The only additional step is to pour in tomato broth and bring your pan to a simmer.

Let the pasta cook, stirring occasionally until it becomes al dente, and don’t add too much broth or else you might end up with a watery pasta dish.

Authentic carbonara does not call for milk; all you need is egg yolks, Pecorino Romano cheese, and guanciale. Guanciale is a cured pork product that is comparable to bacon.

Start by crisping up your guanciale and let it drain on a plate lined with paper towels. Whisk Pecorino Romano cheese with egg yolks, adding one egg yolk per serving for the sauce.

Lastly, sprinkle in freshly ground black pepper and toss in the cooked spaghetti, bucatini, or linguini noodles, plus a splash of pasta cooking water. This classic carbonara is ideal as an appetizer, but it can also serve as a light lunch.
