Calamari soup is one of the simplest soups to prepare, as it has very few ingredients, but this does not change the fact that it will probably become one of your favorites. Remember to put away the ink sac when you clean the calamari and refrigerate it covered with olive oil, as you can use it for preparing some delicious black risotto.
Calamari Soup Recipe
A delicious and easy Calamari Soup recipe, which pairs fresh calamari with a decadent tomato-based broth.
Ingredients
Polenta:
- 1 cup polenta
- 3 cups chicken broth
- Extra virgin olive oil, to taste
- Salt, to taste
- Black pepper, to taste
Prawns:
- 2 lb prawns, peeled and deveined
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 crushed tomatoes (preferably imported from Italy)
- 1 tablespoon tomato paste
- ¾ cup dry white wine
- 3 tablespoons extra virgin olive oil
- ½ teaspoon Red Pepper Flakes
- Salt, to taste
- Black pepper, to taste
Instructions
- In a tall and narrow pot, bring chicken broth to a boil over medium heat.
- Whisk in the polenta and stir well with a wooden spoon.
- Reduce the heat and cook, frequently stirring, until it thickens.
- Season with salt and pepper to taste.
- Divide into four serving bowls.
- Heat extra virgin olive oil in a pan over medium heat and add chopped onion. Cook until lightly golden.
- Add minced garlic and cook for one more minute.
- Blend with wine and cook for two minutes.
- Pour in crushed tomatoes, tomato paste, and season with red pepper flakes, salt, and black pepper. Stir well to combine.
- Cook covered for 40 minutes over medium heat.
- Add prawns and cook for 5 minutes.
- Serve prawns over polenta.
- Enjoy!
Notes
- If you prefer a spicy flavor, you can add some chili pepper.
- Prepare polenta while the sauce is cooking to save some time, or you can also use instant polenta.
