Creamy Baked Gnocchi with Butternut Squash and Spinach Recipe
A luxurious Creamy Baked Gnocchi with Butternut Squash and Spinach recipe which pairs gnocchi and roasted butternut squash with a decadent creamy sauce.
Ingredients
- 1 pound Gnocchi, uncooked
- 1 tablespoon Olive Oil
- 2 tablespoon Butter
- 1 Butternut Squash, small
- 2 cups Baby Spinach, fresh
- 1 small Onion, chopped
- 2 cloves Garlic, minced
- 1 teaspoon Thyme, dried
- 1 cup Heavy Cream
- ½ cup Cream Cheese
- Black Pepper, to taste
- Salt, to taste
Instructions
- Preheat the oven to 400 degrees Fahrenheit.
- Peel the butternut squash and cut it in half. Remove the seeds then cut the squash into 1-inch pieces.
- Add butternut squash pieces to a bowl, drizzle olive oil on top, and season with salt and black pepper. Toss so that oil coats the squash completely.
- Place the butternut squash in a single layer on a parchment-lined baking tray.
- Place the baking tray in the oven for 20 minutes or until tender. Once done, remove the tray and set the squash aside.
- Melt butter in a pot. Add onion and cook for a minute or two until translucent.
- Add garlic and cook for another minute, followed by spinach (cook until it starts to wilt).
- Fill a pot with water and season it with salt. Once it starts to boil, add gnocchi and let it simmer until it floats on the water's surface. Strain the gnocchi and add it directly to the spinach mixture. Cook on high heat, tossing the ingredients gently.
- Add heavy cream and cream cheese and mix well. Let it simmer for a few minutes or until the mixture starts to thicken.
- Incorporate the roasted butternut squash.
- Pour the mixture into an oven-safe dish and place it in a preheated oven (still 400 degrees) for 5 to 10 minutes or until the top becomes golden, then serve.

Notes
- Feel free to add red pepper flakes if you like spice.
- You can replace cream cheese with mozzarella cheese in this baked gnocchi recipe.
- If you use frozen spinach, thaw it completely and wring out the excess water before adding it.
