Gluten-Free Lasagna Soup Recipe
A luxurious Gluten Free Lasagna Soup recipe that pairs ground beef and lasagna noodles with a decadent marinara broth.
Ingredients
- 9 Lasagna Noodles, gluten-free
- 1 ½ pounds Ground Beef
- 1 Onion, medium, finely chopped
- 1 tablespoon Olive Oil
- 2 cloves Garlic, minced
- 1 tablespoon Tomato Paste
- 2 cups Marinara Sauce
- ¼ teaspoon Red Pepper Flakes
- 1 teaspoon Basil, dried
- 1 teaspoon Oregano, dried
- 3 cups Beef Broth
- Black Pepper, to taste
- Salt, to taste
- Fresh Parsley, garnish
- ¼ cup Ricotta Cheese, optional garnish
Instructions
- Cook the beef in a Dutch oven for 5 to 7 minutes or until browned. Season with salt and black pepper and remove from the pot to drain on paper towels.
- In the same pot, add onion, and sauté for a few minutes or until it turns translucent. Add minced garlic and continue to cook.
- Next, incorporate the marinara sauce, tomato paste, red pepper flakes, basil, oregano, and beef broth. Stir and bring the mixture to a boil.
- Return the cooked meat to the pot and let it simmer for a minute.
- Reduce heat to medium-low, add the lasagna noodles, and bring the mixture to a simmer. Check the lasagna noodles to make sure they’re done, then season with salt and pepper to taste.
- Once the gluten-free lasagna soup is ready, transfer it to the serving bowls, garnish with parsley and a full spoonful of ricotta cheese, and enjoy.
Notes
- You can substitute ground turkey for the beef in this gluten-free lasagna soup.
- Add in diced carrots, bell peppers, or zucchini for added texture.
