Ingredients
- 2 pounds Potato Gnocchi
- 2 tablespoons Olive Oil
- 3 cloves Garlic, minced
- 1 can (14 ounces) Crushed Tomatoes
- ½ teaspoon Oregano, dried
- Salt, to taste
- Black Pepper, to taste
- 8 ounces Mozzarella Cheese, diced or torn into small pieces
- Microgreens, for garnish
- Oregano, dried, for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook the gnocchi according to the package instructions or until they float to the surface. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in the crushed tomatoes and dried oregano. Season with salt and pepper to taste. Simmer the sauce for about 10-15 minutes, allowing the flavors to meld together.
- Preheat your oven to 375°F (190°C).
- Add the cooked gnocchi to the skillet with the tomato sauce.
- Gently toss to coat the gnocchi evenly with the sauce.
