Gazpacho has many different influences from Greek, Roman, and Arab cultures and is most often served cold. Look no further for a fresh and healthy summer soup. In addition to being a tasty starter, this green gazpacho is low in calories. You can make your gazpacho as smooth or as chunky as you prefer, there is no right or wrong way to enjoy it.
Green Gazpacho Recipe
A luxurious Green Gazpacho recipe which pairs green vegetables with a decadent blend of avocado and Greek yogurt.
Ingredients
- 1 teaspoon Sugar, granulated
- 5 ¼ ounces Walnuts, toasted
- 1 Avocado, peeled and pitted
- 7 ounces Baby Spinach, fresh
- 1 ounce Basil, fresh
- ⅓ ounce Parsley, fresh
- ¼ cup Sherry Vinegar
- ½ cup Olive Oil
- 1 ⅓ ounces Greek yogurt
- 2 cups Water, filtered
- 8 ¾ ounces Ice Cubes
- 2 teaspoons Salt
- 1 dash White Pepper, freshly ground
- 6 Cucumbers, peeled and diced
- 2 Green Peppers, seeded and chopped
- 1 Green Chile, chopped
GARNISH
- 1 Mini Cucumber, julienned
- Fresh Parsley
- 1 tablespoon Pine Nuts, toasted (optional garnish)
Instructions
- Preheat an oven to 375 degrees Fahrenheit. Toast the pine nuts (if using) for about five minutes.
- Meanwhile, puree the chopped vegetables with yogurt, vinegar, oil, sugar, avocado, walnuts, spinach, basil, parsley, water, ice cubes, salt, and a little white pepper.
- Ladle the green gazpacho into soup bowls and top with more parsley, toasted pine nuts, and julienned cucumber.
- Serve immediately and enjoy.
EQUIPMENT
Notes
- Feel free to substitute pine nuts with almonds or cashews, or simply leave them out.
- Use either a conventional blender or a food processor to mix the gazpacho ingredients.
- You can refrigerate the soup for at least an hour to further cool it down before serving.
