Pasta salads tend to have tons of different ingredients in them, but there’s a little secret trick that I use…When you have an amazing ‘dressing’, you don’t have to add every type of meat, cheese, and veggie to make it delicious.
That’s what makes this recipe special – focus on the dressing instead of the 12 items you can add to it. When you have a great dressing (like a decadent spicy truffle mayo), you can keep the ingredients super simple. The outcome? A fresh and vibrant spring pasta salad perfect for any occasion.
While this is a vegetarian pasta salad recipe, feel free to add meat to it. It would work well with a ground beef or chicken.
Spicy Truffle Spring Pasta Salad (Vegetarian and Made with Spicy Truffle Mayo)
Ingredients
- 10 oz fusilli, (or any short pasta that you like)
- 1 cup spicy truffle mayo
- 1 ½ cups tomatoes, cubed
- 1 shallot, diced
- 2 tsp lemon juice
- salt, to taste
- black pepper, to taste
- fresh basil leaves
Instructions
- Bring a large pot of salted water to a boil and cook pasta as indicated on the package instructions.
- While waiting on the pasta, combine the tomato, spicy truffle mayo, lemon juice, and salt and pepper in a mixing bowl. Mix until thoroughly combined.
- Once pasta is cooked, drain and rinse with cool water until no longer warm.
- Pour cooled pasta into the tomato mixture bowl, along with the shallots. Mix until thoroughly combined. Add more salt and pepper as needed.
- Cover and place into fridge until ready to serve. Serve with fresh basil leaves.
Notes
- Sine this works as a great pasta salad base, feel free to add your fave veggies.
