Add water to a large pot and season it with salt. Bring the water to a boil then add the pasta, cooking according to the package instructions or until al dente. Drain the pasta, reserving some of the pasta cooking water.
Warm a skillet over medium heat and add the butter.
Once the butter melts, sauté the minced garlic for 30 to 40 seconds until fragrant.
Next, add the fresh baby spinach leaves and cook for a minute or two or until they begin to wilt.
Season with black pepper, lemon juice and salt.
Stir in the cooked pasta adding a touch of the pasta water if necessary.
