Pasta salads can taste absolutely divine with the right ingredients, and we don’t think they get the recognition they deserve, so we want to change that. Asparagus and sweet peppers both go perfectly well with each other, and paired with fresh pasta plus a variety of other ingredients, they make an amazing dish you can enjoy in the summer or whenever the mood strikes you. It is a great accompaniment to hot and cold meat and seafood dishes, or can simply be enjoyed with warm crusty bread with an olive oil and balsamic dip.
Asparagus and Sweet Pepper Pasta Salad Recipe
A luxurious Asparagus and Sweet Pepper Pasta Salad recipe which pairs fusilli and vegetables with a decadent honey mustard sauce.
Ingredients
- 1 lb Fusilli Pasta
- ½ lb Asparagus, cut in half
- Sweet Red and Cherry Tomatoes, a handful, sliced
- ½ lb Yellow Bell Peppers
- Arugula, a handful, fresh
- Parmesan Cheese, fresh
For the dressing
- Olive Oil
- Salt, to taste
- Black Pepper, to taste
- Parsley, finely chopped
- ½ teaspoon Lemon Zest
- Lemon Juice, from half of a lemon
- ½ teaspoon Dijon Mustard
- 1 teaspoon Honey
Instructions
- Bring a large pan of salted water to a boil, and cook your pasta until it’s cooked to your liking (or al dente).
- Next, roast the asparagus in the oven at 400 degrees Fahrenheit for around 15 minutes or until slightly charred.
- In a small bowl, make your dressing by adding a splash of olive oil, and combining it with the lemon zest, lemon juice, Dijon mustard, salt and pepper, fresh parsley, and the honey. Set it off to one side.
- Once your pasta is cooked, remove from the heat, drain it, and set it aside to cool. Once cooled, add it to a large serving bowl.
- Add the remaining ingredients (besides the dressing) to the bowl.
- Give everything a gentle mix and then drizzle over your dressing, tossing until everything is well coated.
- Do a taste test and add a little more salt and pepper if needed, and enjoy.
Notes
- You are welcome to use a combination of roasted peppers preserved in olive oil and fresh, crunchy bell peppers to add texture to your pasta salad.
- This pasta salad will keep for several days in the fridge and goes especially well with both hot and cold seafood dishes.
