Preheat an oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
Bring a large pot of salted water to a boil. Cook the gnocchi according to the package instructions or until they float to the surface. Drain and set aside.
Season the salmon fillets with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets and cook for about 3-4 minutes per side, or until they are cooked through and easily flake with a fork. Remove the salmon from the skillet and let it cool slightly. Break the salmon into bite-sized pieces.
In the same skillet, melt the butter over medium heat. Add the flour and whisk constantly for about 1-2 minutes to create a roux.
Gradually pour in the milk while whisking continuously to prevent lumps from forming. Continue to cook and whisk until the sauce thickens, approximately 3-4 minutes.
Stir in the chopped fresh dill, grated Parmesan cheese, salt, and pepper to taste. Remove the skillet from heat.
In the greased baking dish, combine the cooked gnocchi, salmon pieces, and dill sauce. Gently toss to coat the gnocchi and salmon evenly with the sauce.
Sprinkle shredded mozzarella cheese over the top of the dish.
Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted.
Once baked, remove the dish from the oven and let it cool for a few minutes before garnishing it with more fresh dill and serving.
