Chicken Penne Pasta with Tomato Sauce Recipe

Ingredients
- 8 ounces Penne Pasta, dried
- 2 Chicken Breasts, cut into bite-sized pieces
- Salt, to taste
- Black Pepper, to taste
- 2 tablespoons Olive Oil
- 1 Onion, small and diced
- 2 cloves Garlic, minced
- 1 can (14 ounces) Diced Tomatoes
- 1 can (6 ounces) Tomato Paste
- 1 teaspoon Basil, dried
- 1 teaspoon Oregano, dried
- ½ teaspoon Sugar, granulated
- ¼ teaspoon Red Pepper Flakes, crushed, optional
- Fresh Basil Leaves or Parsley , for garnish
- Parmesan Cheese, grated, for garnish
Instructions
- Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
- Season the chicken breast pieces with salt and black pepper to taste.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breast pieces to the skillet and cook until they are browned and cooked through about 6-8 minutes. Remove the cooked chicken from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent and the garlic is fragrant.
- Add the diced tomatoes (with their juices) and tomato paste to the skillet. Stir well to combine.
- Stir in the dried basil, dried oregano, sugar, and red pepper flakes (if using). Reduce the heat to low and let the sauce simmer for about 10 minutes to allow the flavors to meld together.
- Return the cooked chicken to the skillet and stir it into the tomato sauce. Let it simmer for another 5 minutes to heat the chicken through.
- Taste the sauce and adjust the seasoning with salt and black pepper if needed.
- Add the cooked penne pasta to the skillet and toss well to coat the pasta evenly with the tomato sauce and chicken.
- Serve the chicken penne pasta with tomato sauce hot, garnished with chopped fresh basil leaves and grated Parmesan cheese.
Notes
- You can substitute the chicken with shrimp or Italian sausage if you prefer.
