Chicken Penne Pasta with Whole Wheat Noodles Recipe
A luxurious Chicken Penne Pasta with Whole Wheat Noodles recipe which pairs whole wheat penne and chicken with a decadent parmesan and parsley topping.
Ingredients
- 10 ounces Whole Wheat Penne Pasta, dried
- 2 tablespoons Butter, unsalted
- 1 pound Chicken Breasts, boneless, cut into 1-inch pieces
- 1 Onion, small, finely chopped
- 4 cloves Garlic, minced
- 2 tablespoons Dry White Wine
- ½ teaspoon Italian Seasoning
- ½ teaspoon Black Pepper
- Salt, to taste
- 1 cup Parmesan Cheese, freshly grated, divided
- Parsley, chopped, for garnish
Instructions
- Fill a large pot with water and place it over high heat. Season it with salt. Once the water starts to boil, add whole wheat penne pasta and cook until al dente. Then drain and set the pasta aside (save ¼ cup of pasta cooking water).
- Place a saute pan over medium heat and butter. Once the butter melts, add finely chopped onion. Sauté for 2 to 3 minutes or until translucent.
- Add minced garlic and cook for a minute or until fragrant.
- Next, cook diced chicken and mix well. Season the chicken with Italian seasoning, black pepper, and salt.
- Let the chicken cook for 7 minutes.
- Pour white wine and continue to cook for a minute or two.
- Add cooked pasta, pasta cooking water, and ¾ cup of parmesan cheese. Mix well until the cheese melts and everything is well combined.
- Garnish your chicken penne pasta with whole wheat noodles with freshly grated parmesan cheese and parsley and enjoy!
