Ingredients
- 1 pound Italian Sausage, removed from casing
- ¼ cup Butter
- 1 White Onion, small, chopped
- 4 Russet Potatoes, medium, cut into 1-inch cubes
- 4 cups Spinach, chopped
- 1 tablespoon Garlic, minced
- 4 cups Chicken Broth
- 1 cup Water
- 1 cup Heavy Cream
- ¼ cup Parmesan Cheese, grated
- 1 teaspoon Italian Seasoning
- ½ teaspoon Black Pepper
- Salt, to taste
Instructions
- Place a large pot over medium heat. Once the pot heats up, add sausages and sauté for 3 to 5 minutes or until brown. Remove from the pot and set aside.
- Melt butter in the same pot and app chopped onion. Sauté until they are translucent.
- Add minced garlic and saute for 60 seconds or until fragrant.
- Pour water and chicken broth. Add potatoes and season with black pepper and salt.
- Let the mixture simmer until the potatoes are cooked.
- Add spinach and heavy cream. Let the mixture simmer until the spinach starts to wilt.
- Add precooked sausages, Italian seasoning, and parmesan cheese. Mix well and cook for a minute or until the cheese melts.
- Once the soup is heated, transfer it to a serving bowl and serve with a side of bread.
