Ingredients
- 1 pound Potato Gnocchi
- 1 pound Salmon, skin removed, cut into bite-sized pieces
- Salt, to taste
- Black Pepper, to taste
- 2 tablespoons Olive Oil
- 1 Onion, small, diced
- 3 cloves Garlic, minced
- 1 can (14 ounces) Diced Tomatoes
- ½ cup Heavy Cream
- ½ cup Parmesan Cheese, grated
- ¼ cup Black Olives, sliced
- 2 tablespoons Fresh Dill, optional garnish
Instructions
- Preheat an oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.
- Cook the potato gnocchi according to the package instructions until they float to the surface of the boiling water. Drain and set aside.
- Season the salmon with salt and black pepper to taste.
- In a large skillet, heat the olive oil over medium-high heat. Add the salmon to the skillet and cook for about 2-3 minutes on each side until they are lightly browned. Remove the cooked salmon from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent and the garlic is fragrant.
- Add the diced tomatoes (with the juices) to the skillet. Stir well to combine.
- Pour in the heavy cream and stir it into the tomato mixture. Let the sauce simmer for about 5 minutes until it thickens slightly.
- Stir in the grated Parmesan cheese until it melts.
- Add the cooked gnocchi, cooked salmon, and sliced black olives to the skillet. Gently toss to coat the gnocchi and salmon with the creamy sauce.
- Transfer the gnocchi mixture to the greased baking dish and spread it out evenly.
- Bake in the preheated oven for about 20-25 minutes until the top is golden brown and bubbling.
- Remove the dish from the oven and let it cool for a few minutes. Sprinkle chopped fresh dill over the top for garnish, if desired.
