Creamy Chicken Penne Pasta Recipe
A luxurious Creamy Chicken Penne Pasta recipe that pairs chicken breasts and penne pasta with a decadent creamy sauce.
Ingredients
- 8 ounces Penne Pasta, dried
- 2 Chicken Breasts, cut into bite-sized pieces
- Salt, to taste
- Black Pepper, to taste
- 2 tablespoons Olive Oil
- 1 Onion, small and diced
- 2 cloves Garlic, minced
- 1 cup Red Bell Peppers, sliced
- 1 cup Chicken Broth
- 1 cup Heavy Cream
- 1 teaspoon Thyme, dried
- ½ cup Parmesan Cheese, grated
- Green Onions, chopped (for garnish)
Instructions
- Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
- Season the chicken breast pieces with salt and black pepper to taste.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breast pieces to the skillet and cook until they are browned and cooked through about 6-8 minutes. Remove the cooked chicken from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent and the garlic is fragrant.
- Add the sliced red bell peppers to the skillet and cook for another 3-4 minutes until softened.
- Pour in the chicken broth and bring everything up to a simmer. Let the sauce cook for a couple of minutes to reduce slightly.
- Reduce the heat to low and pour in the heavy cream. Stir in the dried thyme, then simmer the sauce for about 5 minutes until it thickens.
- Add the cooked penne pasta and cooked chicken back into the skillet. Stir well to coat the pasta and chicken with the creamy sauce.
- Sprinkle the grated Parmesan cheese over the pasta and stir until the cheese melts.
- Taste the pasta and adjust the seasoning with salt and black pepper if needed.
- Remove the skillet from the heat and immediately serve the creamy chicken penne pasta hot, garnished with chopped green onions.
