Lasagna Soup Recipe
A luxurious Lasagna Soup recipe which pairs ground beef and lasagna noodles with a decadent marinara broth.
Ingredients
- 10 Lasagna Noodles
- 1 ½ pounds Ground Beef
- ½ White Onion, chopped
- 1 tablespoon Olive Oil
- 1 teaspoon Garlic, minced
- 2 tablespoons Tomato Paste
- 2 cups Marinara Sauce
- ¼ teaspoon Red Pepper Flakes
- 1 ½ teaspoons Italian Seasoning
- 4 cups Beef Broth
- 2 cups Baby Spinach
- Black Pepper, to taste
- Salt, to taste
- 1 cup Ricotta Cheese
Instructions
- In a large pot over medium heat, add olive oil. Once it heats up, add the beef and cook for 5 to 7 minutes or until it is browned. Season generously with pepper and salt and mix well. Once done, remove the meat from the pot to drain.
- In the same pot, add onion, and sauté for a few minutes or until it turns translucent. Add minced garlic and continue to cook for a minute or so.
- Pour in the marinara sauce, tomato paste, red pepper flakes, Italian seasoning, and beef broth. Stir and bring the mixture to a boil.
- Return the cooked meat to the pot and let it simmer for a minute.
- Reduce heat to medium low, add baby spinach and lasagna noodles, and bring the mixture to a simmer. Cook until the lasagna noodles are tender. Season with salt and pepper to taste.
- When the soup is ready, transfer it to the serving bowls, garnish with a full spoonful of ricotta cheese, and serve with garlic bread.

Notes
- Feel free to use Italian sausage instead of ground beef in your lasagna soup.
- Sprinkle shredded mozzarella and parmesan cheese on top to make it extra cheesy.
- You can include diced carrots, bell peppers, or celery for added texture.
