Ingredients
- 1 tablespoon Butter
- 500 grams Italian Sausage, diced
- 1 cup Orzo Pasta, dry
- 1 Onion, small, finely chopped
- 3 cloves Garlic, minced
- 3 cups Tomato, canned
- 4 cups Chicken Broth
- 1 tablespoon Tomato Paste
- 1 tablespoon Italian Seasoning
- ½ teaspoon Red Pepper Flakes
- ¼ cup Heavy Cream
- ¼ teaspoon Black Pepper
- Salt, to taste
- Fresh Parsley, for garnish
Instructions
- Place a pot over medium heat and add butter. Once the butter melts, add finely chopped onion and sauté for a minute.
- Add minced garlic and cook for a minute or until fragrant.
- Add diced sausages to the pot and cook for 5 to 7 minutes or until browned.
- Slowly pour the chicken stock and stir using a wooden spoon to scrape the bits stuck to the bottom of the pan.
- Add canned tomatoes, tomato paste, Italian seasoning, red pepper flakes, black pepper, and salt. Mix well so that everything is well combined.
- Bring the mixture to a boil.
- Once it starts to boil, add orzo pasta and cover the pot with a lid.
- Let the soup simmer for 10 minutes or until the orzo pasta is tender.
- Turn off the heat, add heavy cream, and gently stir to combine.
- Garnish the soup with fresh parsley and serve warm.
Notes
- Feel free to add other vegetables such as celery, carrots, spinach, or potatoes.
- If you are a fan of spice, feel free to use spicy Italian sausages. You can also add paprika or cayenne pepper for more heat.
