Ingredients
Make the Cottage Cheese Pancakes
- 16 ounces Cottage Cheese, small curd

- 2 tablespoons Honey
- ½ teaspoon Lemon Zest

- Maple syrup
- Additional fresh fruit
Instructions
Cook the Pancakes
- In a medium bowl, whisk together 4 large eggs until well beaten. Add cottage cheese, vanilla extract, and honey. Whisk until thoroughly combined.
- In a separate bowl, whisk together 1 cup of all-purpose flour and 1 teaspoon of baking soda. Ensure there are no lumps in the flour mixture.
- Gradually whisk the dry ingredients into the wet ingredients until you get a smooth pancake batter.
