Roasted Tomato Crostini Recipe
A luxurious Roasted Tomato Crostini recipe which pairs toasted baguette slices with a decadent roasted tomato and mozzarella topping.
Ingredients
- 1 loaf Baguette
- Olive Oil, to taste
- 6 ounces Mozzarella Cheese, fresh
- Black Pepper, to taste
- Salt, to taste
- Basil, optional garnish
Roasted Tomatoes
- 1 cup Cherry Tomatoes, halved
- ½ tablespoon Honey
- 1 tablespoon Olive Oil
- Salt, to taste
Instructions
- Preheat an oven to 375 degrees Fahrenheit and line two baking sheets with parchment paper.
- Place the baguette on a cutting board and slice it a half inch to one-inch thick. Lay them in a single layer on one of the baking sheets.
- Brush oil on the bread slices and sprinkle with salt and pepper.
- Place the baking dish in the oven and bake for 10 to 15 minutes until crisp.
- Next, add tomatoes, honey, olive oil, pepper and salt in a medium bowl, and toss gently.
- Arrange the tomatoes on your other baking sheet and place them in the oven. Bake for 25 minutes or until tomatoes start to shrivel.
- Once everything is ready, add small pieces of fresh mozzarella to each slice of toast and add a spoonful of the roasted tomatoes on top.
- Garnish with fresh basil and serve immediately.
Notes
- Enhance the flavor of the tomatoes by seasoning them with garlic powder and thyme.
- You could also use softened cream cheese instead of mozzarella on your roasted tomato crostini.
