Roasted Red Pepper Crostini Recipe
A luxurious Roasted Red Pepper Crostini recipe which pairs goat cheese and toast with a decadent red pepper sauce.
Ingredients
- 1 loaf Baguette , sliced about ½-inch thick
- 4 tablespoons Olive Oil
- Kosher Salt
- Black Pepper
- 1 Shallot, minced
- 1 tablespoon Honey
- 2 teaspoons Thyme, fresh
- Pinch Red Pepper Flakes
- 2 tablespoons Red Wine Vinegar
- 16 ounces Roasted Red Peppers, jarred, drained and sliced
- 2 tablespoons Italian Parsley, freshly chopped
- 6 ounces Goat Cheese, soft variety
- Basil, for garnish
Instructions
- Preheat an oven to 400 degrees Fahrenheit.
- Brush olive oil on the baguette slices, and season with salt and pepper.
- Layer the slices on a baking sheet lined with parchment paper and toast them in the oven for 8 minutes or until crisp.
Make the sauce
- Whisk olive oil, vinegar, honey, chili flakes, and thyme in a small bowl.
- Stir in the shallots, parsley, and roasted peppers. Set aside.
Assemble the roasted red pepper crostini
- Spread goat cheese on each piece of toast.
- Add a spoonful of the red pepper sauce, followed by fresh basil on top.
