Smoked Ham Cannellini Soup Recipe

Ingredients
- 2 ½ cups Cannellini Beans, dry
- 2 lb. Smoked Ham, diced
- 1 tablespoon Olive Oil
- 1 Yellow Onion, diced
- 2 Celery Stalks, diced
- 1 Carrot, sliced
- 3 cloves Garlic, minced
- 8 cups Vegetable Stock
- 1 tablespoon Italian Seasoning
- Salt, to taste
- Black Pepper, to taste
- Parsley, optional garnish
Instructions
- Soak the beans for 4 to 6 hours or overnight.
- Pour olive oil into a large pot over medium heat. Once the oil is hot, add onions and cook for 5 to 6 minutes or until translucent, then add garlic and cook for another minute or until fragrant.
- Add smoked ham and the vegetable stock. Bring the mixture to a boil and put a lid on the pot.
- Reduce the heat to medium-low and let it simmer for an hour.
- Next add the soaked cannellini beans, sauteed onion and garlic, carrots, and celery.
- Remove the lid and continue to cook for another hour until vegetables are tender. Season with Italian seasoning, black pepper and salt to taste.
- Once the soup is ready, remove it from the heat, garnish with parsley and serve.

Notes
- If you can’t find cannellini beans, use Great Northern beans instead.
- Feel free to use canned beans instead (use four cans), just drain and rinse them with water before adding them to the soup.
- Use ham shanks or ham hocks for this cannellini soup recipe.
- You can replace vegetable stock with chicken stock to enhance the flavor of your soup.
