Ingredients
- 1 lb. Penne Pasta, dried
- 1 tablespoon Basil Leaves, chopped
- 5 cups Baby Spinach, fresh
- 4 cups Sun-dried Tomatoes, sliced
- Parmesan Cheese, for garnish
- ⅛ cup Balsamic Vinegar
- 1 teaspoon Dijon Mustard
- ½ teaspoon Honey
- 1 clove Garlic, minced
- ¼ cup Olive Oil
- ½ teaspoon Salt
- ½ teaspoon Black Pepper, ground
Instructions
- Pour water into a large pot and bring it to a boil. Cook the pasta according to the instructions on the package then drain it.
- Meanwhile, add balsamic vinegar, Dijon mustard, honey, garlic, olive oil, salt and pepper to a serving bowl, then whisk until all the ingredients are well combined.
