Tiramisu Cookie Recipe

Ingredients
- 3 cups Ladyfingers, crushed
- 6 tablespoons Butter, melted
- 2 Egg Yolks
- 1/3 cup Sugar, granulated
- ½ cup Heavy Cream
- ½ cup Mascarpone Cheese
- 2 Small Eggs, whole
- Cocoa Powder, garnish
- ¼ cup Espresso, warm
- 1 splash Rum, optional
Instructions
- Prepare a baking sheet by lightly greasing it with butter and lining it with parchment paper.
- In a small bowl, add crushed ladyfingers and butter, whisking until well combined.
- Next, add egg yolks and whisk again until smooth.
- Shape the dough into cookies, making a small well in the center.
- Transfer the baking sheet to the oven and bake the cookies for 10 minutes at 400 degrees Fahrenheit.
- Add eggs, mascarpone cheese, and sugar to a mixing bowl and whisk and until the sugar dissolves.
- Next, pour in heavy cream and incorporate until smooth and consistent.
- Mix the espresso and rum in a small bowl and use a pastry brush to apply it to the cooked tiramisu cookies (once they have cooled to room temperature).
- Fill the cookies with the mascarpone mixture and garnish with cocoa powder on top.
- Serve and enjoy!

- The easiest way to crush ladyfingers is by using a food processor.
