Ingredients
- 1 pound Potato Gnocchi
- 2 tablespoons Olive Oil
- 1 Onion, small, diced
- 2 cloves Garlic, minced
- 1 Zucchini, medium, diced
- 1 Yellow Bell Pepper, medium, diced
- 1 cup Mushrooms, sliced
- 1 can (14 ounces) Diced Tomatoes
- 1 teaspoon Oregano, dried
- 1 teaspoon Basil, dried
- ½ teaspoon Red Pepper Flakes, crushed, optional
- Salt, to taste
- Black Pepper, to taste
- ½ cup Mozzarella Cheese, shredded
- Basil Leaves, to garnish
Instructions
- Preheat an oven to 375°F (190°C). Grease a baking dish with olive oil or cooking spray.
- Cook the potato gnocchi according to the package instructions until they float to the surface of the boiling water. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté for about 2-3 minutes until the onion becomes translucent and the garlic is fragrant.
- Add the diced zucchini, yellow bell pepper, and sliced mushrooms to the skillet. Cook for at least 5 minutes until the vegetables are tender.
- Stir in the diced tomatoes (with their juices), dried oregano, dried basil, red pepper flakes (if using), salt, and black pepper. Let the sauce simmer for about 10 minutes to allow the flavors to meld together.
- Add the cooked gnocchi to the skillet and gently toss to coat the gnocchi with the tomato and vegetable sauce.
- Transfer the gnocchi mixture to a greased baking dish and spread it out evenly.
- Sprinkle the shredded mozzarella cheese over the top of the baked gnocchi.
- Cook it for about 20-25 minutes until the cheese is melted and bubbly.
