Zucchini and Salmon Crostini Recipe
A luxurious Zucchini and Salmon Crostini recipe which pairs toasted sourdough bread with a decadent zucchini and smoked salmon topping.
Ingredients
- 1 loaf Sourdough Bread, sliced
- ½ cup Olive Oil, divided
- ½ lb. Salmon, smoked, thinly sliced
- ½ teaspoon Thyme, dried
- 2 Zucchinis, thinly sliced
- ½ cup Cream Cheese, whipped
- Black pepper, to taste
- Salt, to taste
- Chives, for garnish
Instructions
- Brush some oil on each bread slice and season with salt and pepper. Place the bread slices on a baking sheet lined with parchment paper. Bake at 400 degrees Fahrenheit for 5 to 7 minutes then remove them from the oven.
- Prepare another baking sheet with parchment paper. Place zucchini slices in a single layer. Drizzle olive oil on top and season with thyme, salt, and pepper.
- Place the baking tray in the oven (same temperature as before) and bake until browned around the edges. Once done, remove from oven.
- Spread a layer of cream cheese over each bread slice to start assembling the crostini. Top with zucchini and smoked salmon.
- Garnish the zucchini and salmon crostini with chives, then serve and enjoy!
Notes
- You can use an air fryer instead of a regular oven to cook the zucchini.
- Feel free to use ricotta cheese instead of cream cheese to make your zucchini and salmon crostini appetizers.
