Lobster Ravioli with Vodka Sauce Recipe
A luxurious Lobster Ravioli with Vodka Sauce recipe which pairs homemade ravioli pasta with a decadent vodka sauce.
Ingredients
- 1 batch Pasta Dough, fresh
- Chives, fresh, for garnish
For the lobster ravioli filling
- 6 oz. Lobster Meat, cooked
- 1/3 cup Cream Cheese, softened
- Salt, to taste
- Black pepper, to taste
For the vodka sauce
- 1 tbsp Olive Oil
- 1 Shallot, finely diced
- 3 cloves Garlic, minced
- 1 cup Crushed Tomatoes
- ½ cup Vodka
- 1 cup Heavy Cream
- ½ tbsp Italian Seasoning
- Salt, to taste
- Black pepper, to taste
Instructions
Make the ravioli filling
- Add cooked lobster meat, cream cheese, salt, and black pepper to a bowl.
- Mix well until everything is well combined.
Assemble the lobster ravioli
- Roll out the pasta dough using a pasta machine or a rolling pin.
- Lay out one pasta sheet on a lightly floured surface.
- Scoop a tablespoon of the ravioli filling and continue adding filling, placing each about two inches apart, depending on how large you want each ravioli.
- Place another pasta sheet on top and use your fingers to seal the edges.
- Use a pasta cutter to cut out the individual ravioli pasta.
Cook the vodka sauce
- Bring a pot of water on a hot stove. Add salt and cover the pot so it can come to a boil.
- Meanwhile, heat olive oil in a skillet over medium heat.
- Add the chopped shallot and sauté it for a minute.
- Add garlic and continue to sauté until fragrant.
- Pour in vodka and let it simmer until the alcohol evaporates.
- Add crushed tomatoes and cook the sauce for a few minutes.
- Once the water is boiling, add your lobster ravioli and let it cook for several minutes.
- Check the skillet, reduce the heat to low, and pour in heavy cream. Season with Italian seasoning, salt, and black pepper.
- Let it come to a simmer and immediately take it off the heat. Strain your lobster raviolis and toss them in the sauce.
- Garnish your lobster ravioli dish with freshly chopped chives.
- Serve and enjoy!
Notes
- You can replace olive oil with butter if you prefer.
- If you find the vodka sauce a bit too thick, add pasta cooking water to your liking.
